Biscoff Cake Recipe



Hi chappes,

As it's the weekend I wanted to share a cake recipe with you. It's based on one Zoe did in her vlog which was from Jane's Patisserie blog - its a Biscoff Cake. However this one is only 2 tiered as my Mum and I can't eat a 3 tiered cake by ourself - 2 is much more manageable. 




Ingredients:

Cake
200g unsalted butter
200g light brown sugar
200g eggs (around 4 medium eggs)
200g self raising flour
1 tsp baking powder
2 tbsp milk

Icing:
125g Icing Sugar
75g Butter
1 1/2 tbsp Smooth Biscoff
1 tbsp Crunchy Bisoff (you don't have to add this - but its adds texture to the icing)

Decoration:
Biscoff Biscuits
Icing Sugar

Method:
1. Preheat oven to 180C
2. Cream together the butter and sugar oil creamy and smooth
3. Add the eggs, flour and baking powder to the butter and sugar and mix till combined.
4. If the mixture looks slightly dry add a splash of mix
5. Bake in 2 greased- sandwich tins for 20 - 25 mins or until golden brown on top and if poked with a skewer comes out clean. And leave them to cool
6. Whilst the cake are cooling make the icing - place the icing sugar and butter in a bowl and mix til smooth
7. Add the biscoff to the icing til combined - add a splash of milk if its too thick for piping.
8. When the cakes are cool- spread 3/4 of the icing on top of one cake to create a flat layer for the other cake to sit on. 
9. Place the other cake on top of the icing and place the other 1/4 of icing in a piping bag and pipe 6 blops around the edge of the cake and one in the middle.
10. To finish off place 1/2 a biscoff in edge blop on top- sprinkle with icing sugar. And ENJOY!
